Perfect for rainy days, cozy dinners or just a simple but hearty meal. This potato and pumpkin kale stew is delicious as it is nutritious.
Ingredients
- 250 g pumpkin
- 150 g potato
- 1 yellow onion
- 2 cloves garlic
- 2 tbsp butter
- 750 ml vegetable broth
- 1/2 cup heavy cream or milk
- 150 g kale
- salt
- pepper
Instructions
- Lightly stir fry diced onion and garlic in butter for 3-4 minutes.
- Add the chopped pumpkin and potato and stir fry for another 1 minutes on medium heat
- Add in vegetable broth and simmer for 15 -20 minutes until vegetables are all soft
- Blend with a hand blender or food processor and continue to put the pot on the stove on low heat for another 1 minute.
- Turn off the heat and add in the chopped kale.
- Season well and drizzle heavy cream before serving.
