Potato & Pumpkin Kale Stew

Perfect for rainy days, cozy dinners or just a simple but hearty meal. This potato and pumpkin kale stew is delicious as it is nutritious.

  • 250 g pumpkin
  • 150 g potato
  • 1 yellow onion
  • 2 cloves garlic
  • 2 tbsp butter
  • 750 ml vegetable broth
  • 1/2 cup heavy cream or milk
  • 150 g kale
  • salt
  • pepper


  • Lightly stir fry diced onion and garlic in butter for 3-4 minutes.
  • Add the chopped pumpkin and potato and stir fry for another 1 minutes on medium heat
  • Add in vegetable broth and simmer for 15 -20 minutes until vegetables are all soft
  • Blend with a hand blender or food processor and continue to put the pot on the stove on low heat for another 1 minute.
  • Turn off the heat and add in the chopped kale.
  • Season well and drizzle heavy cream before serving.
