Sweet Hydrating Watermelon Salad

Watermelon is often enjoyed on its own as a fruit, but did you know that it tastes really good in a salad too? It’s a great way to hydrate the family and add natural sweetness to a bowl of greens. 

Prep time: 8 minutes

Serves: 3-4 pax

Ingredients

1 quarter watermelon
100 gms batavia lettuce
½ cup sunflower microgreens
2 tablespoon golden flaxseed
3 tablespoon olive oil
A pinch of black pepper

Instructions

  1. Cut the watermelon into roughly 1 inch cubes.
  2. Wash and roughly tear lettuce leaves into bite size pieces.
  3. Toss together watermelon, lettuce, flaxseeds, microgreens and black pepper.
  4. Drizzle olive oil and serve.
